Raw peanut/ground nut/ verkakadalai /kadale beeja sundal

Raw Peanuts - 2 cups
Onions - 1 chopped fine
Carrot - 1 grated
Ginger - small piece chopped fine(optional)
Green chillies - 3 or 4 slit long
Curry leaves - few
Coriander leaves - few chopped
Mustard seeds - 1/4 tsp
Urad dhal - 1/4 tsp

Soak Peanuts in water for 1 - 2 hours... drain water and add water just enough for immersing and pressure cook in a cooker for 2 whistle... leave it aside for 15 mts... then remove and drain water completely..

You can also soak , drain the water and steam in a pressure cooker for 20 mts on medium flame.

Heat oil in a kadai and add mustard seeds + urad dhal + curry leaves... wait for few seconds and ... add onions and fry till light brown... next add green chillies and ginger and saute together for 3 - 4 minutes ... Finally add the grated carrot,peanuts and cilantro/coriander leaves , salt and fry together for 2 - 3 minutes ... remove and enjoy your delicious sundal.
