Aloo Gobi...potato cauliflower fry ..goes well with rice as a side dish or with chapathi/or parathas.

Potato - 3 medium size
Cauliflower - 1/2 ( cut into small florets)
Onion - 1 medium chopped fine
Ginger - 1 inch piece

Turmeric powder - a pinch

Chilli powder - 1 tsp

Dhaniya powder - 1/2 tsp

Amchur powder - 1/4 tsp

Jeera/cumin seeds - 1/2 tbsp

Salt as needed

Oil - 1 tbsp

Peel and cut potatoes into thick cubes...immerse in water until needed....later drain water and add.

Heat oil in a kadai/pan and add jeera/cumin seeds...wait for few seconds and add crushed ginger and chopped onions... fry well till onions are transparent....( can also add 2 medium chopped tomato as a variation...fry till pulpy)... next add potato cubes.... little salt...reduce flame and cover to cook till 3/4 th... in between open the lid and keep stirring... next add cauliflower florets... and fry till both are cooked well ( can also cover and cook )...add salt and the powders...stir well for a minute or two... garnish with chopped cilantro leaves and serve with rice and or chapthis/parathas.

Variation: Can boil potatoes ahead and add to reduce frying time.
