Mint leaves - 1 bunch ( Clean and wash the leaves)
Rice - 2 cups
Onion - 1 medium
Green chillies - 6 - 8( as spice required)
Garlic - 5 pods
Tamarind - small marble size
Coconut grated - 1/4 cup
Mustard seeds - 1/4 tsp
Urad dhal - 1/4 tsp
Curry leaves - few
Salt as needed
Oil - 3 tbsp
Cashew nuts - few
Peanuts - few(optional)
Wash and soak basmati rice for 15 minutes...later cook them with 4 cups of water and little salt in a rice cooker or any other way like you cook rice.....keep it aside and cool it.
Heat 1 tbsp of oil in a kadai/pan and roast peanuts and cashew till they are light brown...keep it aside...in the same kadai add green chillies, garlic, tamarind and mint leaves....fry well for 3 - 4 minutes...remove and grind together with grated coconut in a mixer ..keep it aside.
Heat the remaining oil and add mustard seeds, urad dhal and curry leaves...when they splutter up add onions and fry till they are light brown...next add the ground paste...reduce flame cook for 4 - 5 minutes...next add cooked rice and little salt and mix gently ...so all the masala mixes with the rice...garnish with fried cashew and or peanuts.
