Carrot Poriyal/Porial/Stir fry/Sabji/Kaayi

You can have this dish as a poriyal/dry veg for rice or to stuff in between toasted bread and have it like bread sandwich...

Carrot - 4 or 5
Onion - 1 medium chopped fine
Green chillies - 2 slit long
Chilli powder - 1/2 tbsp
Coconut grated - 2 tbsp
Salt as needed
Oil - 1 tbsp
Mustard seeds - 1/4 tsp
Urad dhal - 1/4 tsp
Curry leaves - few

Peel and grate carrots( you can use the thicker holes too)...keep aside.
Heat oil in a kadai/pan and add mustard seeds, urad dhal and curry leaves...when they start to splutter up add green chillies and onions .... fry till onions are light brown....next add grated carrot...saute and cook for 8 - 10 minutes till carrots are soft ...add salt and chilli powder...mix well...finally add grated coconut(optional).
